
I've always been fascinated by the "make-it-myself" approach to getting what I want or need whether it's clothing, decor, furniture, soap, or even certain food products. While this approach comes with some challenges, such as the cost of shipping materials I can't source locally, it has often been worth it for the satisfaction and results.
Just the other day, I decided to make BLT sandwiches for us. With fresh, delicious tomatoes on hand, it felt like the perfect idea. The bacon sizzled to a perfect medium crisp, filling the kitchen with its irresistible aroma. The bread was in the toaster, browning to perfection. And then disaster struck. No mayo! We all groaned in disappointment. Sure, we made do with Miracle Whip, but it just wasn’t the same. We salvaged the meal with a Cherry Tomato Salad (from a previous post) and some chips, but the absence of mayo lingered in my mind.
Today, I decided to fix that and made homemade mayonnaise. While it’s not exactly Hellman’s, it’s close enough and gets the job done. On a side note, we also ran out of cheddar cheese but I think I’ll leave homemade cheddar to the experts! Some things are best left to the pros.
Homemade Mayonnaise
Ingredients:
1 egg yolk
1 tsp white vinegar or lemon juice
1/2 tsp kosher salt
1/2 tsp ground mustard
pepper to taste
1 cup cooking oil (canola, vegetable or olive)
Directions:
1. Prepare the base: Place egg yolk, a teaspoon of vinegar (or lemon juice), salt, pepper, and mustard into the stand mixer bowl.
2. Whip the base: Attach the whisk attachment and mix on a medium-high speed until the mixture is light and frothy.
3. Slowly add oil: With the mixer still running, begin to drizzle the oil into the bowl, adding just a few drops at first.
4. Incorporate oil gradually: Once the mixture begins to thicken slightly, you can add the rest of the oil in a slow, steady stream, ensuring it's fully incorporated before adding more.
5. Achieve desired consistency: Continue mixing until the mayonnaise is smooth and creamy.
TIP: This stuff makes great tartar sauce for your favorite fish! Just add two tablespoons of dill relish and stir.
